Vinification:
Soft pressing of the whole grapes to obtain and ferment only 50% of the free-run must at a controlled temperature. Aging in steel tanks until spring on its own yeasts.
Secondary fermentation:
Assemblaggio della Cuvée utilizzando, insieme ai vini dell’annata, un buon 20% di vini di riserva affinati in vasche inox termocondizionate per conferire complessità ed unicità. Tiraggio con lieviti selezionati in azienda ed affinamento in bottiglia per almeno 30 mesi. Sboccatura ed ulteriori 2 mesi di evoluzione prima della messa in commercio.
