Farfalla Extra Brut represents the essence of the Ballabio style. It is the synthesis of the elegance, freshness and complexity of Pinot Noir. Its balance comes from the grapes from the property’s vineyards with a predominantly calcareous-clayey structure set on hilly sides between 300 and 400 meters above sea level.

Vinification:
Soft pressing of the whole grapes to obtain and ferment only 45% of the free-run must at a controlled temperature. Aging in steel tanks until spring on its own yeasts.
Secondary fermentation:
Assembling the Cuvée using, together with the vintage wines, a good 20% of reserve wines, aged in heat-conditioned stainless steel tanks to give complexity and uniqueness. Tirage with selected yeasts in the company and refinement in the bottle for at least 30 months. Disgorgement and further 2 months of evolution before being put on the market.
